"...but if ye are prepared ye shall not fear." D&C 38:30

During the month of August we will start working on our three-month food supply from the Church pamphlet: "All is Safely Gathered In". The basis of the three-month supply is building a supply of food that is part of your normal daily diet. Since this is so personal, you will need to adapt these suggestions to what your family eats. We will put a commonly used item to purchase in the weekly announcements and a recipe or idea in the Ward newsletter.

Week of:

Aug 3 - Purchase one lb. of rice per person in your family.

Aug 10 - Purchase 8 cans of cream soups.

Aug 17 - Purchase 20 ounces of pasta per person.

Aug 24 - Purchase 12 cans or bottles of pasta sauce or tomato past with spaghetti sauce packets.

Aug 31 - Purchase 8 (15 oz.) cans of beans (any kind you usually use).

LET'S DO THIS!!

The cannery powdered milk is now $8.40. That is a $5 drop in price!

Leslie Hobbs says, "Macey's has a new brand of powdered milk. It is put out by Blue Chip, makers of Morning Moo. It is milk based and is very similar to Country Cream. It is on sale right now for $10.99 a can. That is a WOW! price. Macey's in Pl. Grove has also updated their food storage section. I have been looking for powdered shortening, they have it and lots of other #10 cans of muffin mixes, veggies, fruits, butter, margarine, corn starch, etc... Morning Moo milk is also on sale in the 50# bags. Country Cream powdered milk is also "on sale" for $15.99. That is still $2 more than from the makers store."

For those of you who missed the class and want to try it now, here is the recipe for bottled butter. It's really easy.

1 lb. of butter fills 2 half-pint jars (with a little extra). 10 lbs. butter fills 24 half-pint jars. Warm canning jars in oven at 200F and boil canning lids and rings. Melt butter in microwave or over low heat in a large saucepan or double boiler. Pour completely melted butter in warm canning jars 1/2 inch from the top and place hot canning lid and canning ring on jar to seal. The heat will seal the lid within a few minutes. You will hear it "pop". You will be able to tell if the jar is completely sealed if the canning lid forms an indentation in the middle. If you can push the lid down and feel movement, the lid is NOT sealed. Wait a few more minutes. Melted butter naturally separates and needs to be shaken to be thoroughly combined as it solidifies. When jars are at room temperature, place in refrigerator. Shake every 10 minutes during the solidifying process for the first hour. Once butter has completely solidified it will not separate. Place jars on storage shelf and use as needed. Refrigerate after opening.

Butter has an "official" shelf life of 2 - 3 years. However, some people have bottled butter that is six years old and is still perfect. Thanks to Sis. Brown for trying this out, bottling the butter and letting us all take some home. I have not attempted this yet but it is on my list of things to do.

Michelle Kendall has some information regarding storing eggs.

Whole Eggs: To freeze whole eggs or yolks crack them into a bowl and gently stir to break up the yolk somewhat. Try not to incorporate air into the eggs. Label the container with the date and the number of eggs. They can be kept frozen for a year, and should be thawed in the refrigerator the day before you intend to use them.
Freezing: Eggs can be stored for at least 1 month, covered in the refrigerator. Freezing is often unnecessary, but it can be done.
Preparation: Select fresh eggs and break each separately into a clean saucer. Examine each for freshness and remove any pieces of shell before mixing with other eggs.
WHOLE EGGS: Thoroughly mix yolks and whites. Do not whip in air. To prevent graininess of the yolks, add 1-½ tablespoons sugar, 1-½ tablespoons corn syrup OR ½ teaspoon salt per cup whole eggs, depending on intended use. Strain through a sieve or colander to improve uniformity. Package, allowing ½-inch headspace. Seal and freeze. Another method of freezing a whole-egg mixture is to use ice trays. Measure 3 tablespoons of egg mixture into each compartment of an ice tray. Freeze until solid. Remove frozen cubes, and package in moisture-vapor resistant containers. Seal and freeze. Three tablespoons of the egg mixture (one cube) equal one whole egg.
EGG YOLKS: Separate eggs. Stir yolks gently. To prevent graininess, add 1-½ tablespoons sugar, 1-½ tablespoons corn syrup OR ½ teaspoon salt per cup of egg yolks, depending on intended use. Strain through a sieve. Package, allowing ½-inch headspace. Seal and freeze. One tablespoon of the yolk mixture equals one egg yolk.
EGG WHITES: Gently mix whites; do not whip. Strain through a sieve. No sugar or salt is needed. Package, leaving ½-inch headspace. Seal and freeze. Two tablespoons of the egg-white mixture equal one egg white.
